The word ‘gluten’ comes from the Latin word ‘glue’, being a substance helping the products to keep its original shape. In fact, gluten is composition of the two proteins termed prolamins and glutelins, that makes dough more elastic and flexible. Gluten is contained mainly in all kinds of cereals, grains, wheat, barley, rye, oats and related products. 

The main advantage of gluten is that it contains plant protein and Vitamin B responsible for our metabolism. However negative impact of gluten on our body is much stronger. About 1% of the world`s population have gluten intolerance known as Celiac decease. Celiac decease has been known since the end of the IXX century. It is autoimmune disorder, immune reaction to eating gluten. Itchy skin, bone pain, fatigue, liver and biliary tract disorders as well as migraines and depression make a short list of the gluten intolerance symptoms. Since most of cereals and bread contain gluten, extra weight is also the result of eating the gluten food.

Gluten free diet is known as the best solution for people with gluten intolerance. It presupposes strict excluding of the products containing gluten, mostly all kinds of cereals, bread and oats. The list of gluten free products includes:
